Noodles with Peanut Sauce
"Pasta" Base:
12 oz of noodles - I like to use Tofu Shirataki noodles
1 cucumber spiralized (thin)
Sauce:
1/2 cup peanut butter
1/4 cup soy sauce, Braggs Amino's or Coconut Amino's
2 TBL rice vinegar
1 TBL toasted sesame oil
1 -2 tsp chili paste or siracha
1 tsp garlic powder
1 tsp ginger
1 cup hot water
For the sauce, combine everything. Cook your pasta. Cover with sauce and garnish with sliced scallions and sesame seeds...and you even add shopped parsley.
You can add Tofu or Chicken to the sauce and have with rice. Be creative.
